Popular Recipe: Oven-Roasted Goat Shoulder
Ingredients:
- 1 goat shoulder (about 1.5 – 2 kg)
- 4 garlic cloves, crushed
- 2 tbsp plain yogurt
- 2 tbsp olive oil or ghee
- 1 tsp meat spice mix
- ½ tsp turmeric + black pepper
- Juice of 1 lemon
- Salt to taste
Preparation Method:
- Mix the yogurt with garlic, spices, lemon juice, and salt.
- Rub the shoulder thoroughly with the marinade and let it sit for at least 4 hours or overnight.
- Preheat the oven to 180°C (356°F) and place the shoulder in a tray covered with foil.
- Roast for about 2 hours, turning occasionally for even cooking.
- During the last 15 minutes, uncover the shoulder to allow the surface to brown and crisp.
Serving Suggestion: Serve with Kabsa rice, traditional bread, and side sauces like tomato dakkous or yogurt.
